Friattas are so easy to make and makes the best breakfast for a crowd . You can serve it hot or room temperature.

1/4 red bell pepper chopped

1/4 yellow pepper chopped

1/4 green pepper chopped

1 small to medium Zuchinni squash sliced and quartered

1 small to med yellow squash chopped sliced and quartered

1/2 onion chopped

1/4 teaspoon pepper flakes ( optional)

1 teaspoon minced garlic

1/2 can tomatoes and green chili’s

1 bag frozen spinach thawed and water drained

Salt

Pepper

6 eggs beaten

3 egg whites beaten

Fresh tomato

1 teaspoon garlic powder

Shredded pepper jack cheese

In a non stick skillet add the onion , squash, and peppers cook till veggies are beginning to get tender. Adding salt and pepper to taste . next add tomatoes and green chili’s, pepper flakes and garlic. Don’t stir. Next add the spinach salt and pepper to taste.add beaten eggs slice tomato and place evenly over the top. You can add the shred cheese now or after its baked just before serving. Sprinkle on top. place in pre- heated oven 375 till eggs are set. About 30 mins. Enjoy!

Serve with bacon and toast or can serve.it alone.

Note: you can add meats or any veggies you like. You can also use just egg whites instead of whole eggs.
