Fried Mush

WE eat a lot of fried mush. You ask what is fried mush? It is fried grits. You can cook these in a skillet on the stove or you can deep fry. I like using my cast iron skillet, you have even heat with cast iron and doesn’t cool down when adding more to the pan.

Leftover cold grits that have dried out some. I put left over grits in a square dish to cool. Makes easier to slice in uniform slices.

1 cup self rising flour

1 teaspoon cornstarch

1/2 teaspoon Cajun seasoning

Vegetable oil

Salt

Place grits on cutting board. If the grits are wet blot with paper towel and let set to air dry a few mins. Cut into 1/4 inch thickness. Mix flour, cornstarch, seasonings mix well. In a skillet add vegetable oil to about 3/4-1inch deep, heat to 375 degrees. Dredge the grits in flour mix shake off excess, carefully put in hot oil.Let cook till golden brown brown. Turning only 1 time. Drain on rack or paper towels to absorb any oil. Salt while hot. You can eat plain or pour a little butter syrup, or a drizzle of honey for a real treat. Enjoy!
