I love onion rings. Been looking for a recipe that the breading is light and crispy, and they aren’t greasy. They hold the breading great while deep frying.This recipe makes a large amount, would be great for a family night of burgers and rings. They are really delicious!
2 large onions cut into 1/4 inch slices
2 1/2 cups buttermilk
2 eggs
3 tablespoons water
1 teaspoon garlic powder
1 3/4 cups flour
2 teaspoons salt
2 teaspoons chili powder
1 teaspoon cayenne
1 teaspoon sugar
Oil for deep frying
Deep fryer
375 degrees
Separate the onion into rings. Place rings in a bowl, pour buttermilk over the rings. Soak for 30 mins. Stirring 2 times. In a separate bowl beat the eggs well add the water. Set aside. In separate shallow dish add the flour and rest of the ingredients. Drain the rings. Dip first in egg mixture, making sure the rings are completely coated with the beaten egg, then in flour be sure the rings are completely coated. Add a few at a time to the deep fryer. Cook till golden brown. Drain on paper towels. Enjoy!
