Creamy Onion Soup

So delicious! Y’all need to give this a try. Serve with a big slice of sourdough bread. Yum

1 large onion sliced thin and rings separated

2 Tablespoons butter

1 can chicken broth

2 chicken bouillon cubes

1/4 teaspoon salt

1/4 teaspoon pepper

1/4 cup Colby cheese grated

Cheddar cheese grated for the top

Sauce:

3 Tablespoon butter

3 Tablespoon flour

1 1/2 cups half n half or milk

In skillet place 3 tablespoons butter and onions. Saute till onions are soft and translucent. Add salt and pepper, pour onions into 2 quart sauce pan. Add chicken broth and bouillon cubes. Stir till chicken bouillon cubes have dissolved heated through. In a skillet over med heat melt 3 Tablespoon butter, with 3 Tablespoons flour stirring till flour is slightly brown. Slowly add milk stirring till sauce has thickened. Add sauce to onions stirring till all is smooth. Add 1/4 cup cheese. Stir till sauce is smooth and bubbly, and cheese has melted. Place in individual serving bowls. Top with a sprinkle of cheese. Serve with a slice of sourdough bread. (Butter is optional for the bread.) Enjoy!
