Bacon Wrapped Chicken

2 chicken breast

6 Tablespoon soften cream cheese

1/2 cup shredded pepper jack cheese or cheese of your choice

4 Tablespoons scallions chopped fine

1/2 teaspoon Garlic powder

6 – 8 slices bacon

Split the chicken breast length wise to make 4 peices. In a zip lock bag put 1 piece of chicken. Seal the bag and pound chicken to about 1/8-1/4 inch thick. Continue with each piece. Set aside. In a bowl put cheese, scallions, and garlic. Mix to a smooth consistency. Put one piece of chicken on a plate, divide the cheese mix into 4 equal parts. spread with a spatula on each chicken piece. Roll the chicken starting lengthwise, if cheese begins to come out stuff it back in with a knife. Take the bacon and wrap around each piece of chicken. Cover with bacon till the chicken is completely covered. Use 1 toothpick to close each end of the chicken to keep cheese from oozing out. Just lace the tooth pick back and forth to close the ends. Don’t forget to take out the tooth picks before serving. Place on a baking sheet. Pre heated oven 375 degrees for 30 mins or till temp of the chicken reaches 165 degrees, with a meat thermometer. Remove from oven move the oven rack 2 notches down from broiler. Turn oven on broil. Return the chicken and brown the bacon to golden brown and crispy. Keep a close watch when using the broil temp. The bacon can burn quickly. Serve hot. Enjoy!
