This casserole is one you could have for breakfast, brunch, or Thanksgiving as a side dish. You make it the night before and bake off the next morning. A great dish when you have a house full of company, or the hustle and bussel of the holidays. The flavor is fantastic. Smells like the holidays as it bakes. So full of flavor and so delicious!
1- 8 oz box cornbread stuffing reserve 1/3 cup for the top
2 cups frozen mixed vegetables slightly thawed
1 1/2 cups chopped ham
3 eggs beaten
2 cups half and half
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 – 3/4 cups pepper jack cheese grated
In prepared 8×12 baking dish, spray dish with butter cooking spray. Put dry cornbread, vegetables, and ham in the baking dish, stir together. In a bowl combine the eggs,milk, salt, and pepper. Pour over the cornbread mixture. Cover with plastic wrap and refrigerate over night. Pre- heat oven 350 degrees. Remove plastic wrap, sprinkle remaining cornbread mix over the top. Cover with foil. Bake for 30 minutes. Remove foil, add cheese. Return to oven. Bake till cheese is completely melted and bubbly. Enjoy!
